What is tofu?

Tofu is made from soy milk. It contains almost no cholesterol and is extremely low in fat. Most of the fat in tofu is unsaturated, which is the good type of fat that the body needs.


Most tofu is shaped like bricks and packaged in water. When storing an opened packags of tofu, keep it refrigerated in an airtight container with water. You can freeze it, but first squeeze out all water in the tofu. You'll find that the texture will change after freezing it. If tofu tastes sour, it's gone bad. Avoid eating tofu beyond the expiration date printed on the package.

How is tofu cooked?

There are several ways to cook tofu, and many recipes are available online. The most popular methods of cooking tofu are to cut it into cubes and either fry it, bake it, or add raw to foods like soup or salad. Tofu has such a delicate flavor that it lends itself toward marinating. BBQ sauce and soy sauce are just two options for marinades.

Types of Tofu

These are the main types of commercially available tofu:

  • Extra Firm or Firm: This type of tofu is most often used in cooking as a meat substitute. It's also good for stir-frying because of its firm texture.
  • Regular: Mid-range firmness. Good for adding raw to soup or salad.
  • Soft: When you don't want the tofu firm, as when making dips, sauces, and other recipes in which you'll blend in the tofu.
